Chef Kevin Hahn has big plans for the menu at Hayseed, the new 95 seat restaurant (130 when we can finally sit outside) opening at Smuttynose Brewery in Hampton sometime in February.

The Spotlight Award-winning People's Choice Favorite Chef won't let me in on any specific dishes, mind you, but we talked about his approach, philosophy, and deviled eggs. I don't know if there will be deviled eggs on the menu, but we did talk about them. And one thing that won't be on the menu is nachos. For sure. No nachos.

When I first heard that Kevin Hahn was going to head up the kitchen at Hayseed I yelled out "perfect!" into the room. The dog barked. And it is the perfect fit. I first met Hahn long ago when he was at Crescent City Bistro in Dover and of course we know him as the chef at Pepperland Cafe in South Berwick, the place where our beloved Lindsey Altshul created not only a wonderful neighborhood vibe but one of the best beer programs on the Seacoast. Hahn is expert at the interplay between brew and food, and knows Smuttynose beers very well.
