What can a passerby expect when he or she sees a bright orange truck peddling lunch? Over the hum of a generator, he is almost certain that greasy tacos, highly caloric sandwiches or over-processed burgers are being whipped up behind the glass. But, what if that same orange truck was kitchen to a true chef from the Culinary Institute of America? What if the food was made from as many local ingredients as possible? What if the truck ran on biodiesel? What if the “cashier” described herself as the front of the house, greeted you smilingly and explained to you the sustainability of the utensils you’ve just been given to eat your falafel wrap with homemade hot sauce?

What makes us green?

  • Use compostable packaging, with cornstarch based cups and utensils.
  • Reuse by sending to-go orders home in cardboard boxes and plastic bags that once held suppliers’ goods like pitas.
  • Kitchen food scraps taken home and composted, then reused as fertilizer on their family farm.
  • Generates only one 25-gallon trash bag of waste every three days
  • Truck runs on a B5 biodiesel.
  • As many fresh and local ingredients as possible; commitment to shorten the distance between the garden and the plate
  • In summer season, most vegetables harvested from their own garden.
  • Dairy and bakery products from local, natural suppliers like Cabot, George’s Bakery and Golden Harvest
  • Fresh brewed and local teas and homemade lemonade instead of bottled sodas and water
